In his latest restaurant venture, Chef Him Uy de Baron offers the tools to make something amazing. Customers are allowed to choose the rice (Japanese, organic red, organic brown, black), two sauces, two kinds of meat, how the egg is cooked, three types of vegetables, and other extras. Prefer a pre-determined bibimbap? They also have that!

I AM KIM is not your typical run-of-the-mill Korean resto. The concept of this restaurant centers a more current and creative interpretation of the traditional BIBIMBAP. Here you can customize your own BAP and have free rein over your bowl. You can choose the type of meat, veggies, rice, sauces, etc–it’s really more for the playful kind of foodie. This is also ideal for those who have special diet restrictions, it allows you to freely choose the ingredients that will best suit your palette and personal health choices. Fluffy white rice as base topped with these beautiful pieces of tuna and salmon and then you mix them together with the sweet teriyaki sauce and that egg yolk binds everything together.

This has the most simple flavorful combination of the composed baps that we tried, but it’s just so good. It reminded me of a really good chirashi but this time has more flavor and you also get the toasted bits of rice at the bottom of the stone pot which I think is the best part.
